How to prepare a rustic pie for a successful dessert?
Before preparing this gourmet dessert, here are the ingredients you will need. For the filling, you need 60g of sugar, 250g of strawberries, 100g of apples (diced), 250g of rhubarb and 18cl of water. And for the dough270g of butter, 450g of flour, 30g of sugar and 1.5 pinch of salt.
Here is a detail you need to know before going to the stove! You might be tempted to fill the pie with apples. But be aware that with this type of dessert, less is more ! Indeed, this fruit releases a lot of juice, which can escape from the pie and dirty the crust and your oven.
Start by making the dough. In a food processor fitted with the steel blade, combine the flour, salt and sugar. Pulse it all briefly so that they combine well, then add the pieces of cold butter. However, this should not exceed 20 seconds!
Knead several times, until the dough becomes a firm ball. Line it afterwards so as to form a disk. And put it in the fridge afterwards. To prepare the filling, peel, core and cut the apples and strawberries. Place them in a large bowl afterwards. Add the sugar, vanilla, cinnamon, melted butter and salt.

Have you followed this far? The next step in preparing this dessert is take the dough out of the refrigerator. Roll it out on parchment paper into a 14-inch circle 1/8-inch thick. However, it’s okay if the edges are a little jagged. Sprinkle the dough evenly with a tablespoon of flour to prevent it from sticking together.
Arrange the apple and strawberry slices on top in concentric circles. Fold the edges of the dough loosely, going around and creating creases as you go. Correct any tears by pinching the dough a little on the edge. Using a pastry brush, evenly brush the mixture withbeaten egg.
Sprinkle 1 tablespoon of turbinado sugar on top crust and 1 tbsp on fruit. Then put the assembled pie in the fridge for 15-20 minutes while you preheat the oven. Then cook it for 55 to 65 minutes. Transfer the mold to a wire rack and let cool. While the pie is cooling, prepare the optional frosting.
Mix the apricot jam with 1-1/2 teaspoons of water in a small bowl. Heat in the microwave until the mixture bubbles. Then, using a pastry brush, brush the fruit with the resulting syrup! This dessert is not too far from our last preparation. So this is a revised version! The ingredients remain the same. Start by washing and peeling the rhubarb. Once you have cut it by 2cm, mix it with sugar then let it drain in a colander for 30 minutes!
In a medium bowl, combine sugar, salt and flour. Pour in water then knead the butter! Then put half of the strawberries followed by the rhubarb on the rolled out dough.
