Mother’s Day Cake Recipes

If your mom is a dessert fan, she’ll love any recipe you choose! Since there are only two days left before the big day, we have chosen extremely simplified recipes that are made quickly! Chocolate, fruit or milky sweetness, we have everything you need! Make this day special not only by preparing a delicious Mother’s Day meal, but also by complementing it with a tasty dessert! Without further ado, here are three Mother’s Day cake recipes tested and approved by the DeaVita team!

This butter and cream delight will make your head spin! Its thick, chocolatey taste is unlike any other. Here’s what you’ll need to make it:

  • 70g butter
  • 2 cups all-purpose flour
  • ⅔ cup unsweetened cocoa powder
  • 1 tablespoon pure vanilla extract
  • ⅔ cup hot brewed coffee
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ⅔ cup chocolate fudge
  • A pinch of kosher salt
  • 1 ¼ cup granulated sugar
  • 1 cup dark brown sugar
  • 4 large eggs
  • 1 cup cream

For the Chocolate Buttercream Frosting:

  • 6 tablespoons of milk
  • 5 cups icing sugar
  • Pinch of kosher salt
  • ¾ cup softened butter
  • 2 teaspoons of pure vanilla

In a large bowl, cream together the icing sugar, cocoa powder, salt and butter. Add the vanilla, and 4-5 tablespoons of milk or cream. Finally, continue to mix until everything is homogeneous.

  1. First, preheat the oven to 175°C and butter two baking tins. Cut parchment paper to fit the bottom of the pans, so the cake comes off easily.
  2. Then coat them lightly with a little flour.
  3. In a small bowl, whisk together the coffee and cocoa.
  4. Next, in another bowl, combine the 2 cups of flour, baking soda, baking powder, and salt.
  5. In a large bowl, place the butter and sugar. Beat them until light, about 3-4 minutes. Add the eggs. Stir in the vanilla and coffee mixture and fold them down.
  6. Combine the dry ingredients, then add to the fresh cream and beat until well blended.
  7. Then divide the mixture evenly between the two molds and bake for 40 to 50 minutes.
  8. To assemble, place one layer of cake upside down on a flat plate. Then frost the top with a layer of chocolate buttercream. Place the second layer upside down on the lower one and fill the top and sides with a thin layer of the cream.

Here is an easy and delicious summer cake in the colors of the rainbow. It is light, fruity and extremely delicious. Here are the ingredients:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1-2 teaspoons baking soda
  • 1 teaspoon baking powder
  • A pinch of kosher salt
  • ¾ cup cocoa powder
  • 2 large eggs and 1 large egg white
  • 1 cup buttermilk at room temperature
  • ½ cup vegetable oil
  • fruit of your choice
  • 1 teaspoon vanilla extract
  • 1 cup strong hot coffee

Vanilla Frosting:

  • 3 cups powdered sugar
  • 1/3 cup butter, softened
  • 1 1/2 teaspoon vanilla
  • 2 to 3 tablespoons of milk
  1. In a medium bowl, combine powdered sugar and butter with a spoon or electric mixer on low speed. Add the vanilla and 1 tablespoon of milk.
  2. Finally, gradually add the rest of the milk so that the frosting is smooth and easy to spread.

  1. Preheat the oven to 175°C. Spray the pan of your choice with nonstick spray.
  2. Sift together the sugar and salt, flour, cocoa, baking soda and baking powder in the bowl of an electric mixer. Beat on low speed until the mixture is smooth.
  3. In another bowl, combine the eggs, buttermilk, oil and vanilla.
  4. Return the mixer to low speed and slowly add the wet ingredients to the dry ingredients. Mix for about 20 to 30 seconds, until the ingredients are incorporated.
  5. Next, add the coffee and stir until incorporated.
  6. Pour the cake batter into the cake pan and bake until a toothpick inserted in the center comes out clean.
  7. Cooking time is approximately 35-45 minutes.
  8. Finally, garnish with the icing and fruit of your choice.

This is by far the easiest and lightest recipe of the three! If the others seem a bit difficult for you, you can’t go wrong making this delicious flan! Here is what you need:

  • 2 cans of sweetened condensed milk
  • 1 package of cream cheese, softened
  • 5 large eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup of water

  1. First, cook the sugar and water over medium heat until golden brown. Quickly pour into an ungreased round dish and let sit for 10 minutes.
  2. Preheat the oven to 175°C. Then, in a bowl, beat the cream cheese until smooth. Next, stir in the eggs, one at a time, until well combined. Add the rest of the ingredients and mix well. Pour over the caramelized sugar.
  3. Then place the dish in a larger mold and pour boiling water. Bake for 45 to 55 minutes.
  4. Remove the dish from the large pan and place it on a wire rack. Leave to cool for at least an hour!
  5. Finally, to unmold, run a knife around the edges and invert onto a large platter.
